When a tap is turned on, cold water enters the tank through a dip tube. The change in temperature causes a system of thermostats and coils to replacing cold water with hot water from the top of the tank to its bottom. After a tap is turned off, an electric water heater will continue to heat water until internal thermostats switch the current off.
